Application
Application of chitosan in food industry: Chitosan can be used as adhesive, humectant, clarifier, filler,emulsifier, glazing agent and thickening stabilizer in food industry. It can also be used as a functional oligosaccharide to lower cholesterol and improve immunity. Enzymatic or acid hydrolysis of shrimp skin or crab shell is widely used in industry to extract chitosan.
